Paula's Kale Salad

Okay friends, this recipe is a must! A friend of mine and registered dietician, Ms. Paula Sanford, taught me and a few others how to make this....and well, it's just too good not to share. We were looking for easy recipes, that weren’t super complicated, and that entire family could enjoy! 

She made this amazing Kale salad and it’s so good I literally eat it once a week. You can have it as a side with dinner, or you could top it with a protein and have it for lunch. Easy peasy. 

The trick with kale, or so I’ve learned, is to massage it! Massage, massage, massage. Oh, and dinosaur kale. You need to get the dinosaur kale. It really makes a big difference. 

Today I took some pics (and my Insta husband helped) to share with you all. I'm not a professional cook or a professional food blogger...but, I got myself an iPhone 8 so hopefully you get the gist.

Here are the ingredients you'll need: Soy sauce, Dinosaur kale, parmesan, lemon, pumpkin seeds, olive oil, pepper. 











First you'll want to combine the zest of 1 lemon + the juice, 1/4 cup olive oil, 1 tsp soy sauce & cracked pepper into the bottom of a large bowl. Whisk together. 

Next, you're going to remove the stem/vein from the leaves. Just run your fingers down the middle. It's my favorite part! 

Once you have removed all the stems from the leaves, lay them on top of each other. Roll them up into a giant ball and cut into ribbons. This trick is money! 

Then, add all the chopped leaves into your giant bowl with dressing. Wash your hands first...and then massage massage massage. 

Add the parmesan & pumpkin seeds and serve! You can roast the pumpkin seeds for a little extra humph. Oh, and you can also add raisins if you want a little sweetness (I don't like raisins, so I don't add them). One of the best parts is that this salad stays good for a couple of days in the fridge. Also a great side dish to take to a friends or dinner party! I hope you enjoy it as much as me!! 

Serves 4


  • 1 large bunch of Kale, stems removed & sliced into thin ribbons
  • Zest and juice of 1 lemon
  • 1 Tbs soy sauce 
  • 1/4 cup extra virgin olive oil
  • fresh ground pepper
  • 1/3 cup raisins
  • 1/4 cup roasted pumpkin seeds 
  • 1/3 cup grated parmesan cheese 


  1. Combine lemon zest, juice, soy sauce, olive oil & pepper into a large mixing bowl. Whisk together. 
  2. Add cut ribbons of kale (stem removed).
  3. Toss the salad with your hands, massaging the dressing into the kale. 
  4. Top with raisins, pumpkin seeds & parmesan.
